■ MAKES 20 OLIVES These olives were served at our wedding rehearsal dinner at Bistro Don Giovanni in Napa Valley. Many of our family members claimed to hate both olives and anchovies, but they ate these with gusto—they’re delicious and so addictive. Years later, I met Donna Scala, chef and co-owner of the restaurant, and she let me in on a little secret: olive fritte are incredibly easy to make! I like to whip these up as a salty bite to snack on while enjoying an aperitif or sparkling wine with friends.
